中央社新聞》研究:全球改吃素 每年可救800萬命
牛津大學馬丁學院研究人員發現,全球改採不吃蛋奶類飲食的純素食的飲食習慣,到了2050年每年可挽救800萬條人命、讓溫室氣體排放量降低2/3並節省1.5兆美元保健費用與氣候災損賠償金。
路透社報導,研究人員指出,這篇發表於美國學術期刊「國家科學院學報」(Proceedings of the National Academy of Sciences)的研究報告,率先評估全球改採蔬食飲食對健康與氣候變遷造成的影響。
「我們所吃的食物大大影響個人健康與全球環境。」牛津馬丁未來食物計畫(Oxford Martin Programme on the Future of Food)成員斯普林曼(Marco Springmann)說,飲食失衡對全球造成更多健康負擔,且我們的食物系統排放超過1/4的溫室氣體。
牛津大學研究人員模擬21世紀中期之前4種飲食產生的影響,分別為「一般」情境、遵從全球指導方針攝取最少蔬果並限制紅肉、糖類與總卡路里量的情境,以及素食飲食與純素飲食。
採取依循全球指導方針的飲食習慣,到2050年每年可讓510萬人免於一死;採用不吃蛋奶類等動物產品的純素飲食習慣,每年可避免810萬人死亡。
對於氣候變遷而言,遵循飲食建議可讓食物相關氣體排放量減少29%;採用素食飲食習慣可降低63%排放量、採取純素飲食習慣可降低70%。
研究報告說,改變飲食內容每年可省下7000億到1兆美元的保健成本、無酬病假與失去的工作天。而降低溫室氣體排放量,則可產生高達5700億美元的經濟效益。
